Sear the seasoned chicken to perfection, then make a delicious garlic-infused sauce with butter, garlic, and optional white wine. Serve this savoury dish with your favourite herbs for an unforgettable meal.

  • 1 1/2 pounds (700g) boneless skinless chicken thighs (around 6-8 fillets)

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon dried thyme (optional)

  • 1/2 teaspoon dried rosemary (optional)

  • 1/2 teaspoon salt

  • 1/4 teaspoon cracked black pepper

  • Pinch of cayenne pepper (adjust to taste)

  • 1 tablespoon olive oil

For The Sauce:

  • 2 tablespoons butter

  • 4 cloves garlic, minced (or 1 tablespoon minced garlic)

  • 1/4 cup dry white wine (optional)

  • 1/2 cup chicken broth or chicken stock

Preparation Instructions:

  • Pat the chicken thighs dry with a paper towel and trim off any excess fat.

  • In a bowl, combine the onion powder, garlic powder, dried thyme, dried rosemary, salt, and pepper. Coat the chicken evenly with the seasoning mixture.

  • Heat olive oil in a large pan or skillet over medium heat. Sear the chicken for 5 minutes until golden and crispy. Flip and cook for an additional 2 minutes.

  • Push the chicken to the sides of the pan and add the butter to the centre. Allow it to melt, then add the minced garlic. Sauté until fragrant, about 30 seconds.

  • Increase the heat to medium-high. Add the white wine and chicken broth to the pan, scraping up any browned bits from the bottom with a wooden spoon. Stir the chicken around and let the liquid simmer until reduced by half, approximately 2 minutes.

  • Remove the pan from heat when the chicken is cooked through. Taste the sauce and adjust the seasoning with additional salt and pepper if desired.

  • Serve the garlic chicken immediately, garnished with fresh chopped parsley or herbs of your choice.
