Ingredients:

  • 8 chicken drumsticks

  • 150g yoghourt

  • 2 tbsp gram flour

  • Salt to taste

  • 1 tsp chaat masala

  • 1 tsp red chilli powder

  • 1 tbsp turmeric

  • 1 tsp garam masala

  • 1/2 tbsp vegetable oil

  • 6 garlic cloves

  • 2 green chillies, deseeded and finely chopped

  • Juice of 1 lemon

  • 1 knob of fresh ginger, approximately 1 inch in length


Preparation Instructions:

  • Place a sieve over a bowl and line it with a sheet of muslin. Pour the yogurt onto the muslin-lined sieve, tie the corners together, and let it hang for 30 minutes to strain.

  • Remove the skin from the chicken drumsticks and make two incisions down to the bone on each side. Squeeze the juice of half a lemon over the drumsticks and mix well. Set aside.

  • Peel the garlic cloves and ginger, then grind them into a paste. In a dry non-stick pan, roast the gram flour over low heat for 2-3 minutes. Allow it to cool.

  • In a bowl, combine the strained yogurt, ginger-garlic paste, roasted gram flour, ground spices (chaat masala, red chilli powder, turmeric, garam masala), green chillies, and salt to season. Add the vegetable oil and whisk until well mixed.

  • Add the chicken drumsticks to the marinade, ensuring they are thoroughly coated. Place the marinated drumsticks in the refrigerator for a minimum of 3 hours, ideally overnight.

  • Preheat the oven to 180°C (gas mark 4).

  • Arrange the marinated drumsticks on a wire rack with a drip tray underneath. Place them in the preheated oven and cook for 20 minutes, turning them a few times to ensure even cooking. Once cooked, let them rest for 5 minutes.

  • Transfer the drumsticks to a wire rack placed under a hot grill. Turn them a few times until they are evenly coloured and cooked through. Squeeze the remaining lemon juice over the drumsticks and sprinkle with chaat masala. Serve immediately.
